Dry ice is used during grape handpicking, transport, and destemming to keep the berries cool, preserving their color and aromatic qualities. The berries are macerated in the winepress with dry ice for a few hours before being gently squeezed to extract the best aromas. Fermentation occurs at a low, controlled temperature, enhancing fruity, floral, and fresh flavors. Böora Ròsat is aged for 5 months in white clay amphorae, with daily batonnage for 3-4 weeks. |
