Grapes are harvested beginning of October when they are overly ripe. After the grapes are dried, they are destemmed and softly pressed and left to ferment for a long time. |
Aging |
Aged three years in oak barrels, with 15% aged in barriques. Then aged in the bottle for 6-8 months. |
