What's better than a nice succulent hot vegetable soup on a cold winter’s night? The season offers a wonderful variety of veggies perfect for a minestrone soup, like cabbage, broccoli, leeks, cauliflower, beets, carrots, celery and potatoes. Add your favorite small pasta (think elbows, little shells, orecchiette, or ditalini), dress with extra virgin olive oil and a sprinkle of Parmesan cheese and you have yourself a wonderful winter meal.
The best wine for a minestrone is most certainly a a red, medium-bodied Sangiovese thanks to his acidity and pleasant freshness that balance rounded and discreet tannins.
