VINO COTTO
Vino Cotto (cooked wine) is obtained by boiling the must of various types of grapes. While still warm, it is decanted into chestnut or oak barrels and left to age for a minimum of one year. Then they are added selected yeasts to accelerate fermentation.This product has very ancient origins. It is known to be used by early Piceni settlements & also highly regarded by the Romans. Carenum is the Roman name of the product. The earliest known reference to this special nectar is by the ancient Roman playwright Plautus in his comedy “Pseudolus” which dates back to 191 B.C
