SAUVIGNON BLANC
Grown in wine regions all over the world, Sauvignon Blanc is known for its range of aromas; from herbaceous green aromas of grass, nettles, blackcurrant leaf and asparagus to fruity aromas of green apples and gooseberries and more esoteric notes of gunflint and cats’ pee. It ranges in color from greenish yellow to straw yellow. In Italy, the best Sauvignon Blanc is found in the Friuli-Venezia-Giulia region of northeastern Italy. Often only called, Sauvignon in Italy, it is a surprisingly versatile wine. Its sharp and herbaceous olfactory profile allows it to be combined with vegetable dishes and preparations rich in aromatic herbs. It pairs wonderfully with Pesto Genovese pasta, pork and spicy fish-based dishes. The acidity of the Sauvignon also pairs with many spicy dishes, therefor it makes an ideal accompaniment to Mexican, Korean and Indian cuisine.
