RISOTTO PERE E TALEGGIO

Cheese and pears always creates a perfect match, even for rice-based recipes.

Risotto with pears and Taleggio cheese it's a simple first course to make but also very particular and elegant. The presence of Taleggio cheese makes it a very creamy risotto but the sweetness and brightness of the pear perfectly balance the buttery and rich flavor of the cheese. A final sprinkle of walnuts will add further texture to the dish.

This recipe pairs well with red wines with fruity flavours and soft tannins. I will go with a Pinot Noir!
