The grapes harvested at slightly different times are vinified separately in temperature-controlled tanks. After the secondary fermentation, a portion is aged in barrels of different origins and toasting levels. This aging process allows the sweetness of the grapes to blend with the fruits of their aromatic base, resulting in a body characterized by elegance and complexity. |

Tasting Notes |
It comes in a lively shade with dark red tones still, just mentioned. More concentrated notes appear at the edges of the glass, cascading gently like a soft red silk drape. On the nose there are hints of chocolate and toasted coffee, which mix with the pleasant aroma of red fruits such as blackberry and blueberry marked by Nero di Troia, accompanied by pleasant notes of fresh jam. On the palate it enters almost on tiptoe, with the full tannins of the Montepulciano merging gracefully with the softer tannins of the Nero di Troia, showcasing a delicate elegance. |

It pairs very well with aged cheeses. With cured meats, this wine is magnificent in combination with tasty and peppery raw meats. Slightly obvious but excellent pairings are those with main courses of red meat and game as well as with dishes from the Apulian cuisine. |
