Wine Making & Aging

After careful air-drying the grapes are destemmed and pressed very gently in the first days of February. The grape must and the skins then ferment for a long time. After several rounds of decanting the wine is transferred into special large oak casks for about two years. The ageing continues for a further 12 months in new French oak barriques. Finally, the wines undergo a final aging refinement in the bottle for six to eight months.

Deep garnet red color with a robust, full, warm scent reminiscent of black cherries, licorice, leather and wood.

Recommendations

With its heady accent of cherries and a touch of licorice, this is the king of gamey foods cooked in sauces. Serve with venison, game meats or aged cheeses.

Wow

Needs a bit of time to breathe before drinking. On the nose there are 3 stages; straight from the bottle, after swirling and when is settles. From the bottle, red fruit dominates; cherry, plum, raspberry, blueberry. After swirling the wine in the glass, the alcohol hits you in the face, burning your nostrils. Once it then settles, aromas of cocoa, coffee, tobacco, and raisins come through. On the palate, nice mix of sweet and bitter, with bold tannins. Finish is long as it should be.
