Wine Making & Aging

Spontaneous Fermentation with Indigenous Yeasts. The grapes are harvested by hand, then destemmed and placed in steel fermenters where the must remains in contact with the skins constantly and ferments at a controlled temperature for about 28 days, followed by soft pressing.
Aged in steel tanks on its own fine lees for approximately 8 months and then bottled. Unfiltered and unstabilized wine, any sediment on the bottom is an indication of authenticity.

Tasting Notes

Color: Ruby color.
A fresh and juicy Montepulciano. Beautiful, fragrant and inviting, in the mouth it reveals itself full of fruity flavors with a good acidity that makes it easy and fun to drink. Good persistence in the mouth, with a tannin that is not too aggressive.

with arrosticini.
