Wine Making

The grapes are picked very ripe, and then estemmed and crushed.
The fermentation, which lasts about three weeks, is made in stainless steel with strict temperature control. The alcoholic fermentation is preceded by a cold maceration (5 days at 8°C)during which the must absorb several aromatic substances. The prolonged maceration of the must in contact with the skins allows optimal extraction of color and texture for a wine, such as Noir, suitable for long aging.

Aging

After a short rest and racking, the wine is poured for about a year in French oak barrels partially new (1/3 new, 1/3 second step, 1/3 third step), place ideal for malolactic fermentation and subsequent aging.
